Nigiri is a specialty hand-pressed sushi that consists of a hand-shaped mound of sushi rice and a fresh piece of fish. To make nigiri, an expert sushi chef first presses sushi rice into a small rectangle. The rice is usually topped with a bit of spicy Japanese horseradish, or wasabi, before a piece of fresh salmon or tuna is draped over it. Other toppings, such as octopus, eel, or sea urchin, require a tiny piece of seaweed to properly bind to the rice. Nigiri may also be topped with a piece of sweet egg called tamago. Nigiri is generally served in pairs, and it is considered acceptable to eat it with one’s hands.

Sushi is one of the fastest-growing cuisines around the world. As this video shows, you can practice proper sushi dining traditions at home by gathering chopsticks, a small condiment dish, pickled ginger, soy sauce, and wasabi.
When you go to a Japanese restaurant, you can order any combination of sashimi, nigiri, and maki rolls made of vegetables and seafood. Be sure to pick an authentic restaurant that uses only fresh seafood. If you are offered a warm towel, use it to clean your hands before it is cleared from the table. You may want to start of your meal with warm sake to complement the cold sushi fish.
