    What Are Nigiri?

    Nigiri is a specialty hand-pressed sushi that consists of a hand-shaped mound of sushi rice and a fresh piece of fish. To make nigiri, an expert sushi chef first presses sushi rice into a small rectangle. The rice is usually topped with a bit of spicy Japanese horseradish, or wasabi, before a piece of fresh salmon or tuna is draped over it. Other toppings, such as octopus, eel, or sea urchin, require a tiny piece of seaweed to properly bind to the rice. Nigiri may also be topped with a piece of sweet egg called tamago. Nigiri is generally served in pairs, and it is considered acceptable to eat it with one’s hands.
